Ingredients

  • 1 lb. pre-washed baby spinach
  • Dressing:
  • 6 slices smoked bacon, cooked, chopped
  • 3 shallots, diced
  • 3 tbs. malt vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 ozs. crumbled blue cheese
  • Garnish:
  • 2 tomatoes, quartered
  • 2 hardboiled eggs, chopped
  • red onion rings
  • parsley sprigs
  • optional: fresh orange pieces

Directions

  1. Mix dressing ingredients together.
  2. Put spinach in a salad bowl, garnish.
  3. Pour dressing on salad, serve.
