  • 3 lb baby new potato Tomato Topping
  • 2 Tbsp. extra virgin olive oil
  • 2 clv garlic, crushed
  • 1 x leek, minced
  • 3 c. crushed tomato
  • 1 Tbsp. tomato, paste
  • 1 Tbsp. sugar
  • 1 Tbsp. fresh oregano, minced
  • 2 Tbsp. fresh basil, minced

Directions

  1. Clean and scrub new potatoes and place in foil packet. Brush potatoes with extra virgin olive oil and seal packet.
  2. Heat on medium-high grill for 30 min.
  3. Remove potatoes from foil and top with tomato topping and fresh basil for garnish.
  4. Tomato Topping:On side burner heat oil in a medium skillet.
  5. Add in garlic and leek and cook for 6-8 min, stirring till leek is soft.
  6. Add in tomatoes, tomato paste and sugar. Stir. Reduce heat and simmer uncovered for 5 min.
  7. Stir in fresh herbs.
