  • 2 tablespoon olive oil
  • 1 red onion peeled and finely diced
  • 2 cup shelled fresh peas
  • 2 medium potatoes peeled and chopped into ½-inch dice
  • 1 bunch fresh tarragon leaves only
  • 2 cup chicken or vegetable stock
  • 3 centilitre shelled baby lima beans, or other 'broad bean' such as fava or butter beans
  • 1 pinch each kosher salt and freshly cracked black pepper
  • 3 tablespoon chopped mint leaves
