- 1¼ cups milk (preferably whole)
- 4 t active dry yeast
- 2 cups AP flour
- For Dough
- 8 T unsalted butter, softened
- ¾ cup sugar
- 1 t salt
- 2 t vanilla paste
- 2 t vanilla extract
- 12 large egg yolks
- 2 cups AP flour
- 2 cups bittersweet chocolate (at least 70% cacao) chunks (I used Scharffen Berger)

.%20Easter/springtime!%20Be%20sure%20to%20check%20out%20all%20the%20links%20down%20below%20to%20see%20everyone%E2%80%99s%20cakes!%20The%20second%20I%20heard%20the%20theme%20I%20knew%20exactly%20what%20I%20was%20making.%20Because%20I%20have%20always%20wanted%20to%20re-make%20babka%20for%20my%20blog.%20Because,%20uh,%20my%20pictures%20suck%20from%20the%20first%20time,%20not%20to%20put%20too%20fine%20a%20term%20on%20it.%20And%20I%20have%20a%20great%20babka%20recipe!%3C/p%3E%3Cp%3EFor%20those%20of%20you%20who%20do%20not%20remember,%20were%20not%20reading%20back%20then,%20or%20just%20plain%20are%20not%20familiar,%20babka%20is%20a%20very%20old%20fashioned%20yeast%20cake.%20The%20same%20term%20is%20used%20for%20a%20similar%20Jewish%20cake%20(bread).%20But%20our%20theme%20is%20Easter,%20so%20I%20definitely%20had%20in%20mind%20a%20Polish%20Easter%20babka%20when%20I%20made%20this.%3C/p%3E%3Cp%3ETraditionally%20babka%20is%20flavored%20in%20a%20very%20old%20fashioned%20manner,%20with%20nuts,%20raisins%20or%20other%20dried%20fruit%20and%20citrus%20peel.%20I%20wanted%20to%20update%20it%20a%20bit,%20so%20I%20used%20bittersweet%20(70+%25%20cacao)%20chocolate%20chunks%20and%20vanilla%20paste%20and%20extract.%20I%20really%20liked%20it.%20I%20saved%20serving%20it%20for%20a%20day%20when%20my%20dad%20would%20be%20visiting%20(I%20learned%20to%20make%20babka%20for%20him%E2%80%94seems%20a%20shame%20to%20not%20make%20sure%20he%20can%20have%20some%20if%20I%20am%20going%20to%20make%20it!)%20and%20he%20and%20my%20mom,%20both%20yeast%20cake%20afficianados,%20gave%20it%20rave%20reviews.%3C/p%3E%3Cp%3EBabka%20with%20Bittersweet%20Chocolate%20Chunks%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%3C/p%3E%3Cp%3ECuisine:%20cake%3C/p%3E%3Cp%3EFor%20the%20sponge:%20In%20a%20medium%20saucepan,%20warm%20the%20milk%20over%20low%20heat%20until%20it%20is%20just%20lukewarm,%20about%20110%20F.%20Place%20the%20milk%20into%20a%20medium%20bowl%20and%20add%20yeast%20%E2%80%93%20whisk%20the%20two%20together.%20Stir%20in%20the%20flour;%20cover%20with%20plastic%20wrap%20and%20let%20rise%20until%20doubled,%20about%2030%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20beat%20together%20the%20butter,%20sugar%20and%20salt%20until%20soft,%20about%202%20to%203%20minutes.%20Beat%20in%20vanilla%20paste%20and%20extract.%20Add%206%20egg%20yolks,%20one%20at%20a%20time,%20beating%20until%20smooth%20after%20each%20one.%3C/p%3E%3Cp%3EMix%20in%20about%20%E2%85%93%20of%20the%20flour,%20then%202%20more%20egg%20yolks.%20Scrape%20down%20the%20bowl%20and%20beater.%20Add%20another%20%E2%85%93%20of%20the%20flour%20and%202%20more%20yolks%20and%20scrape%20down%20again.%20Mix%20in%20the%20remaining%20flour%20and%20egg%20yolks.%3C/p%3E%3Cp%3EAdd%20the%20sponge%20mixture%20into%20the%20mixing%20bowl.%20Mix%20on%20low%20for%202%20minutes.%20Let%20the%20dough%20rest%20for%2010%20minutes.%3C/p%3E%3Cp%3EBeat%20the%20dough%20on%20medium%20until%20it%20is%20smooth%20and%20elastic,%20about%202%20minutes;%20the%20dough%20should%20be%20very%20soft.%20Add%20chocolate%20chunks%20and%20mix%20until%20combined.%3C/p%3E%3Cp%3EScoop%20the%20dough%20into%20a%20buttered%2012%20cup%20bundt%20pan.%20Cover%20and%20let%20the%20dough%20rise%20until%20it%20doubles,%20about%2060%20minutes.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees,%20with%20the%20rack%20in%20the%20center%20of%20the%20oven,%2015%20minutes%20before%20the%20dough%20has%20completely%20risen.%3C/p%3E%3Cp%3EBake%20until%20well%20risen%20and%20very%20golden,%20about%2040%20to%2045%20minutes.%20I%20used%20a%20cake%20tester%20in%20the%20center%20of%20the%20bread%20to%20be%20certain%20it%20was%20done.%3C/p%3E%3Cp%3ERemove%20and%20cool%20in%20the%20pan%20on%20a%20rack%20for%20about%2010%20minutes.%20Then%20invert%20the%20babka%20onto%20a%20rack%20and%20cool%20completely.%3C/p%3E%3Cp%3E3.2.2310%3C/p%3E%3Cp%3E%23BundtBakers%20is%20a%20group%20of%20Bundt%20loving%20bakers%20who%20get%20together%20once%20a%20month%20to%20bake%20Bundts%20with%20a%20common%20ingredient%20or%20theme.%20%20You%20can%20see%20all%20our%20of%20lovely%20Bundts%20by%20following%20our%20Pinterest%20board%20right%20here.%3C/p%3E%3Cp%3EWe%20take%20turns%20hosting%20each%20month%20and%20choosing%20the%20theme/ingredient.%3C/p%3E%3Cp%3E%23BundtBakers,%3C/p%3E%3Cp%3Ebabka,%3C/p%3E%3Cp%3Ebittersweet%20chocolate,%3C/p%3E%3Cp%3Ebundt,%3C/p%3E%3Cp%3Ecake,%3C/p%3E%3Cp%3Echocolate,%3C/p%3E%3Cp%3Echocolate%20chunks,%3C/p%3E%3Cp%3EEastern%20European,%3C/p%3E%3Cp%3EPolish,%3C/p%3E%3Cp%3Evanilla,%3C/p%3E%3Cp%3Eyeast%20cake%3C/p%3E){kind=link}
