Ingredients

  • 2 Tbsp. unsalted butter
  • 3 x Golden brown Delicious apples plus
  • 3 x Granny Smith apples peeled, cored, sliced thin and tossed with
  • 1 Tbsp. lemon juice
  • 1/2 c. brown sugar - (firmly packed)
  • 1/2 c. sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp cornstarch
  • 2 Tbsp. flour
  • 1 1/2 c. all-purpose flour
  • 1/4 c. , sugar plus
  • 1 Tbsp. sugar
  • 1 1/4 tsp baking pwdr
  • 1/2 tsp salt
  • 1/4 c. unsalted butter chilled
  • 2/3 c. half-and-half
  • 3/4 tsp vanilla

Directions

  1. To prepare filling; heat butter in a 10-inch cast-iron skillet over medium heat, add in apple slices and cook, stirring frequently, for about 5 min. Mix sugars, cinnamon, nutmeg salt and cornstarch in a bowl and gently stir mix into apples. Continue to cook till apples are soft but not mushy, about 5 min.
  2. To prepare topping; mix together flour, 1/4 c. sugar, baking pwdr, and salt in a large bowl. Using 2 knives or possibly a pastry blender, cut in the butter till the mix resembles coarse crumbs. Add in the lowfat milk and vanilla, and quickly blend together with spatula.
  3. To assemble the pie; drop heaping Tbsp. of biscuit mix on top of apples, covering most of the center of the mix. Sprinkle top with remaining sugar and bake in preheated 350 degree oven for 25 to 30 min, or possibly till top is golden brown. Remove pie from oven and let stand for at least 5 min before serving.
  4. This recipe yields 6 servings.
