Ingredients
- 6 sm new potatoes cooked and cooled
- 1/2 c. cottage cheese or possibly lowfat sour cream
- 1/4 c. shredded lettuce
- 4 slc bacon -- cooked, crumbled
- 1/3 c. diced tomato salt and pepper
Directions
- Halve potatoes. With melon baller, scoop out cavities from cut sides of potatoes (reserve pulp for another use). Fill potatoes with cottage cheese, lettuce, bacon, and tomato, dividing equally. Sprinkle with salt and pepper.
