Ingredients
- 7 x Large eggs
- 2 Tbsp. Skim lowfat milk
- 1 Tbsp. Chicken stock
- 1 c. Corn
- 1/4 tsp Chili pwdr
- 4 x Corn tortillas
- 1 x Sweet red pepper rings
- 1 x Parsley sprigs
Directions
- Beat the Large eggs, whisk in lowfat milk. Heat stock in large skillet and add in the corn.
- Cook 2 to 3 min. Stir in the Large eggs and sprinkle with chili pwdr. Cook over low-medium heat, stirring occasionally, till the Large eggs are set. Place one-fourth of mix on each tortilla. Serve garnished with pepper rings and parsley sprigs, if you like.
