Ingredients

Cost per serving $0.68 view details
  • 1/2 x Diced green pepper
  • 1/2 x Diced onion
  • 2 x Minced tomatoes
  • 1/2 c. Red or possibly white wine
  • 1/2 c. Cream or possibly lowfat milk Your favorite spices basil, oregano, etc. Salt & pepper

Directions

  1. Heat extra virgin olive oil in large skillet until water sizzles. Add in 1/2 diced green pepper, 1/2 diced onion, 1 to 2 crushed & diced cloves garlic, and a couple minced large tomatoes (peeled if you prefer). You can also add in other veggies if you wish. After they saute/fry for about 5 min, add in one c. tomato sauce, 1/2 c. red or possibly white wine (or possibly stock, or possibly water from the cooking pasta), and 1/2 c. cream (or possibly lowfat milk). Flavor with a sprinkle of oregano, basil, salt and pepper. Turn down heat and simmer about 5 min.
  2. Serve over pasta. This sauce is quite different from the normal cook-all-day sauces; it is more fresh and vibrant, but not as complex. It will accomodate almost any vegetable you choose to add in. Try eggplant or possibly broccoli or possibly asparagus, just to name a few.
