Directions

  1. Finely shred the spinach. Mix together extra virgin olive oil, balsamic vinegar, tarragon, salt and pepper.
  2. Halve avocados. Remove stones, peel and chop. Toss with lemon juice.
  3. Cut smoked salmon into strips.
  4. Toss together spinach and extra virgin olive oil dressing. Gently mix in avocado and smoked salmon. Serve.
