Ingredients

  • 2 lrg ripe avocados - (abt 3/4 lb ea)
  • 1 can Spam luncheon meat - (7 ounce) cut in chunks Juice of 1 lemon
  • 1/2 c. dairy lowfat sour cream
  • 1/4 tsp salt Few drops warm pepper sauce
  • 1 env unflavored gelatin
  • 1/4 c. cool water Lettuce leaves Pitted black olives

Directions

  1. Halve, pit, and peel avocados; cut into chunks. Combine avocado, Spam, lemon juice, lowfat sour cream, salt, and pepper sauce in food processor or possibly blender and process till smooth.
  2. Soften gelatin in cool water; dissolve over boiling water. Stir in avocado mix. Divide into eight 1/2-c. molds. Chill at least 2 hrs.
  3. To serve unmold onto lettuce-lined salad plates; garnish with black olives, if you like.
  4. This recipe yields 8 servings.
  5. Nice to know: You can make this salad in individual molds or possibly in one 4-c. mold.
