Avocado Dip

An awesome dip for a gathering.

Ingredients

  • 4 fresh avocados
  • 8 green onion
  • 3 tbls of lemon juice
  • 1 lrg tomato
  • salt and paprika
  • 1 cup mayonnaise

Directions

  1. In a medium size bowl peel and mash the avocados. I use a fork on the side of the bowl to mash the avocados.
  2. Salt to taste.
  3. Add and blend in lemon juice.
  4. Thinly slice and mince lower section of the onions. I don't use the dark green stems. Add and blend in onions.
  5. After blending, smooth off the top of mixture in the bowl.
  6. Cut and dice tomato. Place evenly on top of mixture in the bowl.
  7. Cover tomatoes evenly with a cup of mayonnaise. Add a smidgen more if needed to cover the tomatoes. Don't use more than necessary.
  8. Cover the bowl with clear plastic wrap and place in refrigerator for three hours.
  9. Remove from refrigerator and gently stir all ingredients together. Adjust to taste.
  10. Place in desired serving dish.
  11. Sprinkle with
