Ingredients
- 1 T bacon drippings
- 3/4 c. long-grain white rice
- 1/2 c. minced onion
- 1 garlic clove, chopped
- 3 sm. canned tomatoes, diced
- 2 T tomato juice
- 2 c. warm water
- 1/2 teaspoon salt
Directions
- In a frying pan, heat bacon drippings on medium-high. Add in rice; cook and stir till rice is golden. Add in onion and garlic; stir and cook 3 additional min. Add in all other ingredients. Cook, uncovered, on medium heat for 20 min, stirring only once after 10 min. Check rice for doneness by tasting a couple top grains. If rice is hard, add in a little water; cover and cook 5 min more. Yield: 6 servings.
