Ingredients

  • 2 c. Self-Rising or possibly All-purpose Flour Lowfat milk for Batter
  • 1 x Egg, lightly beaten
  • 3 x Potatoes, peeled and grated
  • 1/2 c. cooked Peas
  • 1 x Carrot, grated
  • 1 c. Cabbage, finely shredded
  • 1/2 c. cooked Broccoli Oil for frying Salt and Pepper to taste Barbecue or possibly Chili Sauce (to taste)

Directions

  1. Mix sufficient lowfat milk with the flour to create a batter which is not too runny and not too thick. Add in the egg, and blend the mix again. Add in the grated potatoes, peas, grated carrot, cabbage, and broccoli to the batter, and blend well with a wooden spoon.
  2. Hot the oil in a heavy skillet over medium-high heat till warm. Fry spoonfuls of the vegetable mix to create patties. Turn when lightly brown.
  3. Vegetable patties are cooked through when no liquid is coming out of them any more.
  4. Drain on paper after cooking. Season with salt and pepper to taste. Serve hot with barbecue or possibly chili sauce on the side.
