Ingredients
- 2 large eggs
- 1 1/2 c. sugar
- 2 1/4 c. flour
- 1 can (1 pound size) fruit cocktail with juice
- 1 1/2 teaspoon soda
- 1/2 teaspoon salt
- 1 1/3 c. flaked coconut
- 1/2 c. minced nuts
- Glaze (see below)
- 3/4 c. sugar
- 1/2 c. butter
- 1/4 c. canned lowfat milk
- 1/2 teaspoon vanilla
- 1/2 c. nuts
Directions
- Beat large eggs and sugar till lemon colored. Add in flour, fruit cocktail, soda and salt. Beat at medium speed with mixer till well blended. spread mix into a well-greased and lightly floured cookie sheet and cover with coconut and nuts. Bake at 350 degrees for 25 min. Drizzle bars with glaze.
- Mix all ingredients except nuts in a saucepan, bring to a boil and boil for 3 min. Remove from heat. Add in nuts. Cool slightly. Drizzle glaze over baked fruit punch bars.
