for me it is one of the most delicious pies ever. it is a home tradition to us since a friend has given it to my mother many years ago.

Directions

  1. we prepare a firm pastry with all the ingredients and we keep it in the refrigerator for 1/2 - 1 hour.
  2. we cut in small cubes the aubergines, we sprinkle salt and we let them in a strainer for 1 hour in order to dry.
  3. we sautee the onion and the aubergines in the olive oil.
  4. we remove from the heat,
  5. we add the cheese, the eggs - after keeping apart 2 tablespoons to be spreaded on the top of the pie -, enough pepper and finely chopped parsley, and the yoghurt.
  6. we spread butter in an oven pan no.26. we open filo with the 2/3 of the pastry and we cover the pan. we put the filling mass and we cover with another filo made with the pastry left.
  7. we spread the egg we have kept before and we bake in a medium oven for about 45 minutes.

      thanks for your good words. I like eggplants very-very much and I have lots of recipes. so if you want any new one let me know!
      I like also Psomi with honey. Have you ever tries greek yoghurt with honey? it's simply divine!
