Aubergine Bake Recipe

Ingredients

  • 2 sm Aubergines, cut into 1cm ( 1/2-inch) slices
  • 1 Tbsp. Extra virgin olive oil
  • 1 x Onion, sliced
  • 2 x Garlic cloves, crushed
  • 1 x 397 gram can minced tomatoes, (14oz)
  • 3 Tbsp. Minced fresh basil
  • 100 gm Mozzarella cheese, sliced (3 1/2oz) Pepper

Directions

  1. Bring a saucepan of water to the boil, add in the aubergine slices and simmer for 5 min. Drain, then pat them dry with a clean tea towel or possibly kitchen paper.
  2. Place the aubergine slices in a greased ovenproof dish. Preheat the oven to Gas Mark 4/180 C/350 F.
  3. Heat the oil in a non stick frying-pan, add in the onion and fry over a low heat for 5-10 min or possibly till soft. Add in the garlic and cook for 2 min.
  4. Add in the tomatoes and simmer for 5 mintues or possibly till the mix has thickened slightly.
  5. Add in the basil and season with pepper, then pour over the aubergine.
  6. Scatter the slices of mozzarella over the top and bake in the oven for 30 min or possibly till the cheese is golden brown and bubbling .
  7. Serve with a green salad and fresh wholemeal bread.
