Ingredients

  • 2 c. asparagus, (about 1 lb.), diagnonally sliced
  • 1/3 c. orange juice
  • 3 Tbsp. white wine vinegar
  • 2 Tbsp. water
  • 1 Tbsp. extra virgin olive oil
  • 2 tsp Dijon mustard
  • 1/4 tsp freshly grnd pepper
  • 1/8 tsp salt
  • 2 c. cooked small seashell macaroni
  • 1 1/2 c. cherry tomatoes, quartered
  • 1 c. yellow bell pepper, diced
  • 1/2 c. kalamata olives, minced
  • 1/4 c. green onions, thinly sliced
  • 2 Tbsp. capers

Directions

  1. Steam asparagus covered, 2 min, drain, and set aside.
  2. Combine orange juice and next 6 ingredients (orange juice through salt) in a large bowl; stir well with a wire whisk. Add in asparagus, pasta, and remaining ingredients; toss well.
