  • 2 tsp Vegetable oil
  • 1 Tbsp. Chopped garlic
  • 1 Tbsp. Grated peeled fresh gingerroot
  • 1/3 c. Chopped red bell pepper
  • 2 Tbsp. Fermented black beans, (available at Oriental marketsand specialty foods shops), rinsed, liquid removed well, and crushed slightly
  • 1 1/2 Tbsp. Medium-dry Sherry
  • 1 Tbsp. Soy sauce
  • 1/4 tsp Sugar
  • 1 1/2 c. Chicken broth
  • 2 tsp Cornstarch

Directions

  1. In a skillet heat the oil over moderately high heat and in it stir-fry the garlic, the gingerroot, and the red bell pepper till the pepper is softened. Add in the beans and stir-fry the mix for 2 min. Add in the Sherry and boil the mix, stirring occasionally, for 10 min. In a small bowl dissolve the cornstarch in 2 tsp. cool water, whisk it into the mix, and simmer the sauce till it is thickened slightly. Add in black pepper to taste and serve the sauce over asparagus.
