Ingredients

  • 1/2 tsp finely-grated orange peel
  • 2 Tbsp. fresh orange juice
  • 2 Tbsp. seasoned rice vinegar
  • 4 ounce rinsed and crisped arugula - (4 c.) (or possibly baby spinach leaves)
  • 4 ounce shelled cooked tiny shrimp Salt to taste Freshly-grnd black pepper to taste
  • 2 x crusty French rolls - (2 ounce ea)

Directions

  1. In a large bowl, mix orange peel, orange juice and seasoned rice vinegar. Add in arugula or possibly spinach and shrimp; mix and add in salt and pepper to taste.
  2. Divide between two salad plates and set a French roll alongside.
  3. This recipe yields 2 servings.
