Directions

  1. Saute/fry chicken strips in nonstick skillet till white, about 5 min. Set aside and keep hot. In large skillet, bring all remaining ingredients, except peas, pimentos and capers, to a boil. Cover and simmer about 30 min, till rice has adsorbed liquid. Add in peas, remove from heat and let steam. Arrange chicken and sauce over rice, garnish with pimentos and capers.
  2. Makes 6 servings.
