Ingredients
- 1 lb Skinless, boneless chicken, cut into 1" strips
- 1 med Onion, quartered
- 2 x Green peppers, minced
- 1 x Jalapeno pepper, seeded and
- 3 x Cloves garlic, chopped
- 2 Tbsp. Minced fresh coriander
- 2 c. Chicken stock
- 1 c. Crushed and liquid removed canned Italian plum tomatoes
- 1 tsp Grnd cumin
- 1 tsp Chili pwdr
- 3/4 c. Long-grain brown rice
- 1 dsh Cayenne pepper
- 1 c. Green peas (fresh or possibly frzn)
- 1 Tbsp. Sliced pimentos
- 1 Tbsp. Rinsed and liquid removed capers
Directions
- Saute/fry chicken strips in nonstick skillet till white, about 5 min. Set aside and keep hot. In large skillet, bring all remaining ingredients, except peas, pimentos and capers, to a boil. Cover and simmer about 30 min, till rice has adsorbed liquid. Add in peas, remove from heat and let steam. Arrange chicken and sauce over rice, garnish with pimentos and capers.
- Makes 6 servings.
