Ingredients
- 6 x strips bacon
- 1 lrg onion minced
- 2 x aji verdes (Italian frying peppers) diced
- 2 x garlic cloves chopped
- 1 lb ham diced
- 3 Tbsp. tomato paste
- 2 can pigeon peas - (15 ounce ea)
- 6 c. chicken stock
- Â Â Salt to taste
- 6 c. Canilla rice
- Â Â Banana leaves (optional)
Directions
- In a saute/fry pan, cook the bacon, drain the fat and cut into small pcs.
- In the same pan, add in onion, aji verdes and garlic. Saute/fry till golden. Add in the ham. Add in tomato paste and caramelize. Add in pigeon peas and chicken stock. Season with salt to taste and bring to a boil.
- Add in rice and stir once. Cook on medium heat till most of the liquid is absorbed. Cover with banana leaves and continue cooking on very low heat till the rest of the liquid is absorbed, about 20 min.
