Ingredients

  • 1 1/4 c. Flour
  • 1 1/4 c. Oats, uncooked
  • 1/2 c. Sugar
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 3/4 c. Butter
  • 2 tsp Vanilla
  • 10 ounce Apricot preserves
  • 1/2 c. Coconut, flaked

Directions

  1. Combine flour, oats, sugar, soda and salt in a large bowl; blend well. Add in butter and vanilla; mix well till crumbly. Reserve 1 c. of mix.
  2. Press remaining crumb mix into a greased 13X9 pan. Spread apricot preserves on crust to within 1/4" of edge. Sprinkle with reserved crumb mix and coconut. Bake at 350F for 20-25 minutes, or possibly till lightly browned.
  3. Cold and cut into 24 bars.
