  • 2 1/4 c. cooked dry apricots
  • 1/2 c. sugar
  • 1 Tbsp. grated orange rind
  • 2 x egg whites baked spry pie shell * see
  • 1/2 c. heavy cream whipped confectioner's sugar
  • 1/4 tsp vanilla

Directions

  1. Woody - This doesn't sound exactly like what you want, but I found the recipe in an old Spry cookbooklet I got at a yard sale many years ago. Cut apricots to small pcs. Combine sugar and orange rind and mix with apricots. Beat egg whites till stiff and fold into apricot mix, blending well. Pour into baked pie shell. Bake in moderately warm oven (375 degrees) for 30 min. Serve cool, topped with whipped cream to that sugar and vanilla have been added. James Faunce MGFX39A
