  1. 1. Preheat oven to 350 .
  2. 2. Lightly spoon flour into dry measuring c.; level with a knife. Combine flour and next 4 ingredients (flour through nutmeg) in a large bowl; make a well in center of mix. Combine buttermilk, applesauce, 1 Tbsp. butter, egg, and egg white in a bowl; add in to flour mix, stirring just till moist.
  3. 3. Spoon batter into a 9-inch round cake pan coated with cooking spray.
  4. Combine pecans and remaining ingredients in small bowl; stir with a fork till mix resembles coarse meal. Sprinkle proportionately over top of cake. Bake at 350 for 35 min or possibly till a wooden pick inserted it center comes out clean.
  5. Yield: 8 servings.
