Ingredients
- 1 1/2 c. rolled oats
- 1 1/4 c. flour
- 3/4 teaspoon cinnamon
- 1 teaspoon baking pwdr
- 3/4 teaspoon soda
- 1 c. unsweetened applesauce
- 1/2 c. raisins
- 1/2 c. skim lowfat milk
- 1/2 c. brown sugar
- 3 T vegetable oil
- 1 egg white
Directions
- Heat oven to 375 degrees. Line or possibly oil well 12 muffin cups or possibly 6 large muffins.Put together flour, cinnamon, baking pwdr and soda. Add in applesauce, lowfat milk, brown sugar, oil and egg white. Mix just till dry ingredients are moistened. Fill muffin cups almost full.
- Heat 1 tbsp butter and mix with 2 tbsp brown sugar and 1/4 tsp cinnamon. Sprinkle on top. Bake for 20 min or possibly till deep brown.
