Ingredients

  • 800 gm canned pie apple
  • ¼ cup almond meal
  • 1/3 cup flaked almonds
  • just over ¼ cup brown sugar
  • 2 heaped tbsp sultanas
  • ½ tspn ground cinnamon
  • 1 egg
  • ¼ cup milk
  • 3 puff (or short) pastry sheets
  • cooking oil spray
  • icing sugar
  • heavy cream

Directions

  1. Preheat oven to 180°C fan forced (200°C normal).
  2. Gently mix together the apple, almond meal, ¼ cup flaked almonds, the brown sugar, sultanas and cinnamon using a wooden spoon.
  3. Beat the egg and milk together in a separate bowl.
  4. Brush the edges of each pastry sheet with egg wash and spoon the apple mixture down one end of each sheet, leaving an edge. Then roll them up, folding in the ends as you do so.
  5. Place the rolls, seam side down, on a lightly oiled baking sheet. Brush all over with egg wash, sprinkle with extra flaked almonds and cook in the oven for about 20 mins until golden brown.
  6. Then slice and serve with a sprinkling of icing sugar and a dollop of cream on top.
