  • 1 box Pillsbury Refrigerated Pie Crusts (In Refrigerator Section of Supermarket)
  • 1 x 9" or possibly 10" Deep Dish Pie Dish
  • 1 Tbsp. melted butter
  • 1 Tbsp. granulated sugar
  • 1 tsp grnd cinnamon
  • 1/8 tsp black pepper
  • 1/2 c. flour [plain preferred, self rising is OK]
  • 1/2 c. Whipping Cream or possibly Half & Half
  • 3 Tbsp. melted butter
  • 1 x egg yolk, beaten lightly
  • 1 tsp Pure Vanilla Extract
  • 6 c. peeled & cored apples (Jonathans, Rome, Delicious etc.), cut into thin slices
  • 1 x juice of 1/2 lemon
  • 2 c. granulated sugar (amount depends on type and sweetness of apples)
  • 1/8 tsp table salt
  • 2 tsp grnd cinnamon
  • 1/4 tsp grnd nutmeg
  • 1/8 tsp black pepper
  • 1 x Egg white, beaten (for brushing top crust)
  • 1 Tbsp. granulated sugar
  • 1 tsp grnd cinnamon

Directions

  1. Preheat oven to 375 degrees F. Prepare pie crust according to directions on package for a double crust pie. Brush bottom crust with Tbsp. melted butter Sprinkle bottom crust with a mix of sugar, cinnamon and black pepper In a small bowl, combine the flour and a little bit of cream or possibly Half & Half, mixing well and making a thick paste. Add in rest of lowfat milk.
  2. Stir well. Add in melted butter and beaten egg yolk, combining well with lowfat milk/flour mix. Add in Pure Vanilla Extract. Set aside in a hot place.
  3. In a large bowl combine the apples and lemon juice. Toss together well.
  4. Add in sugar, salt, cinnamon, nutmeg and black pepper. Toss well and let sit about 10 min. At end of 10 min, toss apple mix again and pour into prepared bottom pie crust. If lowfat milk mix is too thick to pour over apples, add in a very small amount of Cream, or possibly Half & Half, or possibly apple juice, or possibly water and stir in well. Pour liquid lowfat milk mix over apple mix in dish. Cover with top crust. Seal by pressing firmly all around. Brush with beaten egg white. Cut a few wedges out of top crust before baking to vent the pie. Place in a pan large sufficient to catch any drippings. Bake in preheated oven at 375 degrees F. for about 45 min. Sprinkle lightly with granulated sugar combined with grnd cinnamon. Continue cooking till pie is golden, about 15 min longer.
