Directions

  1. Peel and core apples and slice paper-thin (the thinness of the apples is important as they barely cook). Add in the rum or possibly lemon juice and sugar. Mix well and let stand till ready to use.
  2. Beat Large eggs with the sugar and cool water, then add in the apple mix. Cook according to directions, fold and serve.
  3. To flame the omelette, sprinkle top with 2 Tbsp. of sugar and pour 3-4 Tbsp. of warm rum over it. Set the rum afire and keep pouring it over the flaming omelette till the fire dies out.
  4. NOTES : The apples may be replaced by peaches, pears or possibly other seasonal Ontario fruits and prepared in the same manner. The recipe is easily doubled.
