  • 6 Tbsp. Butter or possibly margarine, softened
  • 6 Tbsp. Granulated sugar
  • 2 x Large eggs
  • 4 lrg Apples, peeled and coarsely grated Juice of 1 to 1 1/2 lemons
  • 1 x 9" pie shell (unbaked) Whipped cream or possibly ice cream

Directions

  1. Preheat oven to 425 F. Cream butter and sugar well. Fold in Large eggs, one at a time. Stir in apples, then lemon juice. Fill pie shell; bake for 20 min. Reduce heat to 350 F; continue baking for 25 min. Serve with whipped cream.
  2. Serves 6-8
