Apple Filled Oatmeal Cookies

Ingredients

  • 1 c. butter
  • 1 c. brown sugar
  • 2 large eggs
  • 2 c. flour
  • 2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 c. lowfat milk
  • 2 c. quick-cooking oats
  • 1 c. apples, unpared and diced
  • 1/4 c. raisins
  • 1/4 c. walnuts, minced
  • 1/2 c. sugar
  • 2 T water

Directions

  1. Cream together butter and sugar; beat till fluffy. Beat in large eggs. Sift together flour, baking pwdr, salt, cinnamon and cloves. Add in to creamed mix alternately with lowfat milk. Stir in oats. Set aside about 3/4 cup of dough.Drop remaining dough from tsp onto greased cookie sheet. Make small depression in center of each cookie. Top with apple filling and small amount of reserved dough. Bake at 375 degrees for 10 to 12 min.
  2. To make the apple filling: Put together all ingredients in saucepan. Cook, stirring constantly for 10 min or possibly till the mix is thick and the apples are tender. Cool.
  3. Makes 36 cookies.
