Ingredients

  • 6.375 quarts sour cream
  • 4 1/4 cups sugar
  • 1/2 cup salt
  • 1/4 cup pepper
  • 1/3 cup ground mustard
  • 21.25 pounds apples, granny smith, unpeeled julienned
  • 2 cups lemon juice
  • 46.75 pounds green cabbage, shredded

Directions

  1. In a large bowl, combine the first five ingredients; mix well. Cover and chill for at least 1 hour.
  2. Toss apples with lemon juice. Combine apples and cabbage; mix well. Just before serving, add dressing and toss to coat.
  3. Follow all CCP procedures as other slaw recipes.
