  • 2 1/4 c. Oat Bran Cereal
  • 1/4 c. Brown Sugar, Packed
  • 1 tsp Cinnamon
  • 1 Tbsp. Baking Pwdr
  • 1/4 c. Walnuts, Minced, Optional
  • 1/2 c. Raisins
  • 1/2 c. Skim Lowfat milk
  • 3/4 c. Frzn AppleJuiceConcentrate
  • 2 x Egg Whites, Large
  • 2 Tbsp. Vegetable Oil
  • 1 x Apple, Minced, Md

Directions

  1. Mix the dry ingredients in a large bowl. Mix the lowfat milk, apple juice concentrate, egg whites and oil. Blend well. (Can be done in a blender.)
  2. Add in to the dry ingredients and mix well. Add in the minced apple and spoon into muffin c. which have been sprayed with a non-stick coating. Fill three-fourths full and bake in a 400 degree F oven for 15 to 17 min, or possibly till done. Serve hot.
