Ingredients
- 2 1/4 c. oatbran cereal
- 1/4 c. brown sugar
- 1 1/4 teaspoon cinnamon
- 1 T baking pwdr
- 1/4 c. minced nuts
- 1/4 c. raisins
- 1/2 c. evaporated skim lowfat milk
- 3/4 c. frzn apple juice concentrate
- 2 egg whites
- 2 T vegetable oil
- 1 med. apple, minced (including skin)
Directions
- Mix dry ingredients in one bowl, wet ingredients in another bowl. Then mix the two together, add in apple. Line muffin tins or possibly grease and flour tins. Fill muffin tins almost to the top, as this recipe does not rise much. Bake at 425 degrees for 17 min. These may be stored in a plastic bag in the refrigerator or possibly may be frzn. Makes 12 to 15 muffins.
