Apple Cinnamon French Toast

Ingredients

  • 2 lrg apples
  • 5 Tbsp. butter
  • 1 c. firmly packed dark brown sugar
  • 2 Tbsp. dark corn syrup
  • 1 tsp cinnamon
  • 8 x baguette slices (1" thick)

Directions

  1. Day before serving: Peel, core, and slice apples. Grease 9x13" baking pan. In a large heavy skillet, heat butter over medium heat. Add in apples and cook, stirring occasionally, till tender. Add in brown sugar, corn syrup, and cinnamon. Cook, stirring till sugar dissolves. Pour mix into the baking pan and spread to an even layer, arranging apple slices in concentric circles.
  2. Arrange bread slices in a layer on top. In a medium bowl, beat Large eggs, lowfat milk, and vanilla with a fork till combined. Pour over bread. Cover and refrigerateovernight.
  3. Before serving:Preheat oven to 375 F. Remove the cover from the baking pan and bake for 30-35 min till the mix is hard and the bread is golden brown. Let cold for 5 min. Invert a serving tray over the baking pan and carefully flip both so which the apple layer is on top. Spoon any apple slices or possibly syrup which remain in the pan over the top.
