Apple Cider Cream Pie Recipe

I bought a big jug of Ziegler's honeycrisp apple cider, so thought some of it might make a good pie.

  • 1 pre-baked 9 inch pie, baked 15 minutes and cooled.
  • 2 cups apple cider (do not use apple juice)
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup sour cream
  • 1/4 tsp. salt
  • 4 large beaten eggs
  • pinch of nutmeg and cinnamon
  • topping: reddi-wip or cool whip

Directions

  1. Heat the oven to 325 F.
  2. In a saucepot, reduce the cider to 1/2 cup, let cool.
  3. Whisk in sugars, sour cream, salt, and spices.
  4. Add the eggs and incorporate them completely.
  5. Pour mixture into the pie shell.
  6. Check doneness at 45 minutes.
  7. You want the center to be very slightly jiggly.
  8. Remove and let cool.
  9. Refrigerate up to 2 days.
  10. Serve with topping.
