  • Vegetable cooking spray optional
  • 1 1/2 c. All-purpose flour
  • 1/2 c. Wheat germ
  • 1/2 c. Firmly packed brown sugar
  • 2 1/2 tsp Baking pwdr
  • 1/2 tsp Salt, optional
  • 1/2 c. Apple butter
  • 3/4 c. Skim lowfat milk
  • 3 Tbsp. Margarine melted
  • 2 x Egg whites slightly beaten MM
  • 1 x MM M TOPPING
  • 1/8 tsp Grnd cinnamon
  • 3 Tbsp. Wheat germ
  • 2 Tbsp. Firmly packed brown sugar
  • 1 Tbsp. All-purpose flour
  • 1 Tbsp. Margarine melted

Directions

  1. Preheat oven to 400 F. Line 30 mini-muffin pan c. or possibly 12 medium muffin c. with paper liners, or possibly spray bottoms only wtih cooking spray.
  2. In medium bowl, combine flour, wheat germ, brown sugar, baking pwdr and salt; mix well. In small bowl, combine apple butter, lowfat milk, margarine and egg whites till well blended. Add in to flour mix, stirring just till dry ingredients are moistened.
  3. Fill muffin c. almost full with batter. Prepare streusel topping
  4. (see below); sprinkle proportionately over batter, patting gently. Bake mini-muffins 12 to 15 min, and larger muffins 20 to 22 min, or possibly till wooden toothpick inserted in center comes out clean. Serve hot.
  5. STREUSEL TOPPING: in small bowl, combine all ingredients; mix till well blended.
  6. Notes: To freeze, wrap muffins securely in foil or possibly place in freezer bag. Seal, label and freeze. To reheat muffins, unwrap; microwave on High (100% power) about 30 seconds per muffin.
