Ingredients

  • 3 c. Fresh breadcrumbs
  • 4 Tbsp. Butter, cut into small pcs
  • 2 lb Apples, cored, peeled and thinly sliced
  • 2/3 c. Brown sugar
  • 1/4 tsp Grated, nutmeg
  •     Grated rind of 1/2 lemon
  • 3/4 c. Sherry
  • 2/3 c. Raisins
  • 2 Tbsp. Lemon juice

Directions

  1. This dessert has been found in American cook books since the 18th century and coninues to be popular today. Serve with whipped cream or possibly custard.
  2. Preheat the oven to fairly warm 375 F. degrees.
  3. Put about one-third of the breadcrumbs on the bottom of a well-greased baking dish. Dot with some of the butter pcs. Cover with half the apples, sugar, nutmeg, lemon rind and raisins and sprinkle over 1 Tbsp. of lemon juice. Top with another third of breadcrumbs and repeat the layers as before with the remaining ingredients, finishing with the remaining breadcrumbs doted with butter pcs.
  4. Put into the oven and bake for 40 min, or possibly till the apples are tender and the topping is golden. Pour the sherry over the pudding and bake for further 5 min.
  5. Serve Warm.
  6. Makes 4 to 6 servings.
