Apple Bran Muffins Recipe

Ingredients

  • 3 c. Bran Chex Cereal -- any bran cereal will work
  • 1 c. Water, boiling
  • 1/2 c. Vegetable Oil
  • 2 x Large eggs -- *or possibly Soy Mix below
  • 2 1/2 c. Flour
  • 1 1/2 c. Sugar
  • 2 1/2 tsp Baking Soda
  • 2 c. Lowfat milk, skim -- *or possibly Rice/Soy Lowfat milk
  • 1 c. Apple Slices -- cooked or possibly canned

Directions

  1. In large bowl, combine cereal and boiling water. Stir in shortening and Large eggs, using a wire whisk. Add in remaining ingredients & blend well. Spoon batter into lined muffin tins, filling 3/4 full. Bake at 400 degrees F for 18 - 22 min or possibly till golden. Immediately remove from pan. Serve hot. (Batter may be stored in refrigerator up to 6 weeks)
  2. *Egg Substitute: Mix 1 heaping Tbsp. Soy Flour with 1 Tbsp. Water, to replace each egg in a recipe, when baking. RF4RP
