Ingredients
- Apple Biscoff Cookie Bars (adapted from Two Peas and Their Pod)
- 1 stick butter
- 2 cups brown sugar
- 1/2 cup Biscoff spread
- 2 eggs
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup cored, peeled and diced apples (about 1 medium)

.%3C/p%3E%3Cp%3EAnd%20I%20was%20right.%3C/p%3E%3Cp%3EJust%20as%20an%20aside,%20I%20do%20find%20the%20Biscoff%20spread%20a%20little%20trickier%20to%20cook%20with%20than%20peanut%20butter.%20(Note:%20This%20does%20NOT%20mean%20I%20love%20it%20any%20less.)%20While%20it%20will%20melt%20down%20and%20become%20incorporated%20like%20peanut%20butter,%20it%20can%20quickly%20become%20stiff,%20unlike%20peanut%20butter.%3C/p%3E%3Cp%3ESo%20in%20this%20recipe,%20you'll%20need%20to%20not%20only%20work%20fast%20but%20also%20work%20a%20little%20harder%20than%20you%20might%20think%20to%20get%20the%20batter%20distributed%20evenly%20in%20the%20pan.%3C/p%3E%3Cp%3EAnd,%20as%20you%20can%20see%20from%20the%20photos,%20initially%20the%20Biscoffy%20batter%20doesn't%20coat%20the%20apples%20very%20well,%20but%20once%20it%20begins%20to%20bake,%20it's%20smooth%20sailing.%3C/p%3E%3Cp%3ESo%20don't%20worry%20...%20you%20will%20end%20up%20with%20chewy,%20Biscoffy,%20apple%20goodness%20that's%20part%20cake,%20part%20cookie.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EIn%20a%20pan,%20melt%20the%20butter%20and%20sugar,%3C/p%3E%3Cp%3Estirring%20constantly,%20over%20medium%20heat%20until%20smooth%20and%20combined.%20Remove%20from%20the%20heat,%20and%20stir%20in%20the%20Biscoff%20spread.%20Cool%20slightly.%3C/p%3E%3Cp%3EWhisk%20the%20flour,%20baking%20powder,%20baking%20soda%20and%20salt%20together%20in%20a%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20one%20at%20a%20time,%20to%20the%20sugar%20mixture,%20making%20sure%20to%20mix%20well,%20then%20stir%20in%20the%20vanilla.%3C/p%3E%3Cp%3EAdd%20the%20wet%20mixture%20to%20the%20dry,%20and%20stir%20until%20smooth.%20Fold%20in%20the%20apples%20as%20best%20you%20can.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20a%209%20x%2013%20pan,%20working%20the%20batter%20into%20the%20corners%20and%20to%20the%20edges%20of%20the%20pan.%20Bake%20for%20about%2030%20minutes.%20Put%20pan%20on%20wire%20rack%20to%20cool.%3C/p%3E%3Cp%3EOnce%20completely%20cooled,%20cut%20into%20bars.%3C/p%3E){kind=link}
