  1. Let the bread and lowfat milk soak for 30 min.
  2. Heat apple juice with 1/4 c. of the sugar till the sugar is dissolved. Add in apples and cook till apples are tender and no liquid is left in bottom of pan. Stir in raisins and apricots and remove from heat. Mix the fruit and bread mix and cold to room temp.
  3. Preheat oven to 325F. Grease a 9 x 13 x 2-inch baking dish.
  4. Whisk egg substitute with remaining 1/4 c. sugar, vanilla, and cinnamon. Stir into the apple mix till well combined. Bake till a knife comes out clean, about 55-60 min.
  5. Broil the top, till golden brown, about 1-2 min. Serve at room temperature.
