Ingredients

  • 2 x Egg yolks
  • 150 gm Sugar
  • 250 gm Mascarpone cheese
  • 5 Tbsp. Amaretto (or possibly any almond liqueur)
  • 1 x Egg white
  • 2 lrg Apples (approx. 500 g)
  • 50 ml Apple juice (approx. 1/5 c.) Cinnamon All-spice
  • 40 gm Amarettini (small almond or possibly apricot stone macaroons)
  • 1 tsp Cocoa-pwdr

Directions

  1. Beat egg yolk and 50 g sugar till frothy. Add in mascarpone and mix. Add in 3 Tbsp. Amaretto. Beat egg white till stiff and carefully mix with the cheese mix. Put into the fridge for at least 2 hrs.
  2. Peel apples, cut in quarters, remove the cores and cut them into slices.
  3. Heat the remaining sugar in a wide saucepan and let it caramelize ()
  4. till it turns golden. Add in the apple slices and stew them for a moment. Then pour in the apple juice, add in a healthy pinch of each cinnamon and all-spice and let the apples cook for about 3 minutes. Let them cold down in the saucepan.
  5. Sprinkle the amarettini with the remaining liqueur. Arrange the caramelized apples and the mascarpone creme in four dessert bowls.
  6. Distribute the amarettini and finally sprinkle some cocoa-pwdr on top.
