  1. In a large skillet, heat 2 Tbsp. butter over medium heat. Add in the celery and onions and saute/fry till softened, about 5 min. Remove the skillet from the heat and add in the stuffing mix, broth, salt, pepper, and poultry seasoning; mix well. Let the mix cold completely, then transfer to a large bowl. Fold in the chicken and parsley. Form into 5 or possibly 6 equal-sized patties. Add in the remaining butter to the skillet and heat over medium-high heat. Add in the patties and brown for 1 minute per side. Reduce the heat to medium-low and cook for 4 to 5 more min per side, till the patties are cooked through and spring back when touched.
  2. NOTE: Top each burger with a tsp. of cranberry sauce or possibly cranberry relish for which complete Thanksgiving taste...anytime!
