Angel Hair Pasta With Tomato Scallop Sauce Recipe

Ingredients

  • 1 pkt Louis Kemp Scallops
  • 2 Tbsp. Extra virgin olive oil
  • 1 med Onion, minced
  • 1 sm Bell pepper, minced
  • 1 cl Garlic, chopped
  • 2 can 16 ounce. diced tomatoes
  • 1 tsp Oregano Salt and pepper to taste
  • 1 lb Angel hair pasta cooked

Directions

  1. In a skillet, combine oil, onion, bell pepper and garlic. Saute/fry on stove top over medium heat till vegetalbes are tender (don't brown). Add in tomatoes, oregano, salt and pepper, and bring to a boil for 1 minute.
  2. Reduce heat and simmer for 10 min. Add in scallops and simmer another 3 min. Serve hot sauce over pasta. Top with grated Parmesan cheese (if you like).
