Andra's Chicken Salad Recipe

I made this from ingredients on hand and loved it!

  • 1 roast chicken breast, diced (about 4 oz)
  • Salt and pepper, to taste
  • 2 Tbsp Mayo or light mayo
  • 1 tsp. Pampered Chef Dill Mix (mix of dill, garlic and dried onion)
  • 2 tsp. Horseradish mustard
  • 1/4 tsp. Celery Seed
  • 1-2 Tbsp. Red Onion
  • 2 Tbsp. diced Jazz Apple
  • 1 Tbsp. Craisins

Directions

  1. Dice chicken and season with salt and pepper.
  2. Add mayo, mustard, dill mix and celery seed. Stir.
  3. Add onion, apple and Craisins.
  4. Refrigerate 2 hours to allow flavors to blend. (The first time I made this, I couldn't wait and it still tasted great!)

    Just the thing for a warm afternoon. I added one chopped Granny Smith apple and 1/4 cup chopped pecans. Really made it super yummy.

      I love Granny Smith apples! Unfortunately, didn't have any. But the Jazz Apples are just tart enough to be a great substitute. And I like the idea of adding pecans. Will try that next time.
