  1. Cook potatoes in their jackets till soft. Cold, peel, and dice. Mix potatoes gently with the remaining 5 salad ingredients.
  2. DRESSING INSTRUCTIONS: Mix Large eggs with sugar, cornstarch and salt. Add in vinegar, cream and mustard. Cook till thickened. Remove from heat and beat in butter. Add in mayonnaise and mix till smooth.
  3. ASSEMBLY INSTRUCTIONS: Add in potato mix to the cooled dressing, folding gently together.
