American Breakfast Cake Recipe

Ingredients

  • 300 gm Plain flour
  • 25 gm Caster sugar
  • 3 tsp Baking pwdr
  • 1 pch salt
  • 110 gm Slightly salted butter
  • 50 gm Mild Cheddar cheese, grated Lowfat milk to moisten
  • 4 x Eating apples
  • 50 gm Soft brown sugar, (50 to 80)
  • 1/2 tsp Powdered cinnamon A little melted butter

Directions

  1. Sieve the flour, caster sugar, baking pwdr and salt together into a bowl. Rub in the butter, then mix the cheese in.
  2. Add in sufficient lowfat milk to moisten the mix and form a soft but not sticky dough. Knead the dough lightly on a floured board. Pat it out on to an ungreased Swiss roll tin about 18-25cm.
  3. Peel, core and thinly slice the apples and arrange on the dough.
  4. Sprinkle with the brown sugar and cinnamon, brush with the melted butter and bake for 25 min at 220C/425F/gas 7. Serve hot.
