Ingredients
- Finnegan's Chocolate Cream Cake, crumbled
- 1 cup lightly salted, roasted almonds, chopped (I pulsed mine in the food processor)
- 3 Tablespoons butter
- 1 Tablespoon Almond Milk
- 2 teaspoons coconut extract
- 1-1/2 cups confectioner's sugar
- toasted coconut
- dipping chocolate

%3C/p%3E%3Cp%3EDark%20Chocolate%20Cake,%20Coconut%20Flavored%20Frosting,%20Lightly%20Salted%20Chopped%20Almonds%20all%20dipped%20in%20either%20dark%20or%20white%20chocolate%20and%20topped%20with%20toasted%20coconut%20flakes.....this%20was%20very%20sinful!%3C/p%3E%3Cp%3EIt%20is%20that%20time%20of%20month%20again.%20%20The%20time%20when%20all%20the%20members%20of%20the%20Secret%20Recipe%20Club%20finally%20reveal%20who's%20blog%20they%20have%20been%20stalking%20and%20cooking/baking%20up%20a%20storm%20from!%20%20This%20month%20I%20was%20paired%20with%20Ria%20of%20Ria's%20Collection.%20%20Ria%20definitely%20likes%20to%20bake%20and%20of%20course%20I%20do%20too!%20%20I%20haven't%20been%20baking%20a%20lot%20lately%20because%20I%20have%20been%20being%20a%20good%20girl%20and%20exercising%20and%20eating%20healthy%20-%20for%20the%20most%20part!%20%20However,%20I%20decided%20that%20it%20was%20time%20for%20some%20chocolate%20and%20I%20knew%20my%20neighbor%20had%20been%20craving%20it%20too.%20%20So,%20I%20went%20looking%20on%20Ria's%20blog%20to%20see%20what%20she%20had%20for%20cake.%20%20I%20found%20a%20cake%20that%20Ria's%20husband%20had%20made%20for%20her%20(wasn't%20that%20just%20sweet!).%20%20He%20made%20Finnegan's%20Chocolate%20Cream%20cake%20and%20it%20looked%20really%20chocolatey%20and%20yummy.%20%20I%20had%20to%20make%20it.%3C/p%3E%3Cp%3ESo,%20this%20bundt%20cake%20I%20decided%20would%20be%20cupcakes%20or%20mini%20bundt%20cakes.%20%20However,%20that%20is%20not%20exactly%20what%20I%20came%20out%20with.%20%20The%20batter%20was%20yummy,%20it%20smelled%20awesome%20baking,%20but%20alas,%20it%20was%20not%20meant%20to%20be%20mini%20anything%20not%20to%20mention%20a%20cupcake.%20%20It%20didn't%20rise%20like%20a%20cupcake%20and%20it%20overflowed%20in%20the%20mini%20bundt%20pan.%20%20I'm%20assuming%20if%20I%20would%20have%20done%20what%20I%20was%20told%20and%20actually%20baked%20it%20in%20a%20bundt%20pan,%20it%20would%20have%20worked!%3C/p%3E%3Cp%3ENeedless%20to%20say,%20I%20could%20not%20waste%20this%20cake!%20%20I%20decided%20that%20with%20cake%20that%20flopped,%20you%20can%20always%20make%20cake%20balls%20and%20that%20I%20did!%20%20I%20sat%20down%20and%20crumbled%20it%20all%20up%20and%20put%20it%20in%20my%20fridge%20until%20I%20decided%20what%20flavor%20I%20wanted%20to%20go%20with%20for%20the%20cake%20balls.%20%20The%20major%20part%20of%20liquid%20in%20this%20cake%20is%20coffee%20and%20I%20loved%20how%20the%20coffee%20brought%20out%20the%20cocoa%20in%20the%20cake.%20%20I%20decided%20that%20since%20I%20love%20almonds,%20salt,%20chocolate,%20and%20coconut....that%20I%20would%20make%20a%20cake%20ball%20that%20would%20incorporate%20these%20ingredients.%20%20These%20turned%20out%20so%20good%20that%20I%20they%20had%20to%20go%20to%20work%20so%20they%20weren't%20eaten%20all%20up%20by%20Grumpy%20&%20me!%3C/p%3E%3Cp%3EBelow%20is%20how%20I%20put%20my%20cake%20balls%20together%20however,%20for%20the%20cake%20recipe,%20please%20go%20visit%20Ria's%20blog%20:)%3C/p%3E%3Cp%3EChocolate%20Almond%20Cake%20Balls%20with%20Toasted%20Coconut%3C/p%3E%3Cp%3EToss%20chopped%20almonds%20with%20crumbled%20cake%20and%20set%20aside.%3C/p%3E%3Cp%3ECream%20butter,%20milk,%20coconut%20extract%20and%20confectioner's%20sugar%20until%20frosting%20becomes%20creamy.%3C/p%3E%3Cp%3EWork%20frosting%20into%20cake%20crumbles%20using%20clean%20hands%20until%20cake%20comes%20together.%20%20Shape%20into%20balls,%20dip%20in%20chocolate%20and%20top%20with%20toasted%20coconut.%3C/p%3E%3Cp%3EShare%20with%20friends%20and%20coworkers%20and%20they%20will%20love%20you%20forever....or%20at%20least%20until%20the%20cake%20balls%20are%20gone!%3C/p%3E%3Cp%3EBLOG%20HOP%20SNIPPET:%3C/p%3E){kind=link}
