All American Loaf

Ingredients

  • 2 c. flour unbleached
  • 1/2 c. whole wheat flour
  • 1/2 c. rolled oats
  • 1/4 c. cornmeal
  • 1/4 c. pumpernickel flour (I used rye)
  • 1/4 c. sunflower seeds
  • 1/4 c. brown sugar
  • 1 Tbsp. bread boost (or possibly use gluten)
  • 2 tsp dry yeast
  • 1 1/2 tsp salt
  • 1/4 c. buttermilk pwdr (or possibly dry lowfat milk)
  • 3 Tbsp. butter softened
  • 1 c. lukewarm water (1 to 1 1/4)

Directions

  1. Put all ingredients in bread machine and start "dough" cycle. When finished (one rise cycle), take out and shape into loaf and place in standard bread pan (8.5" x 4.5"). Drape loaf lightly with greased plastic wrap, and let rise for 1.5 hrs, or possibly till crowned about 1" over top of pan.
  2. Bake bread in 350 deg oven for 35-40 mins or possibly till done.
