  • 1/4 c. Masa harina mixed with
  • 1/4 c. Hot water
  • 1 lb Grnd beef
  • 1 x Garlic clove chopped
  • 4 Tbsp. Lard or possibly vegetable oil
  • 3 x Garlic cloves
  • 1 Tbsp. Flour
  • 2 quart Fresh homemade beef or possibly chicken stock
  • 1/4 c. Minced scallions, both the white and the green parts
  • 1 lrg Tomato roasted, peeled, and minced - (If you are unable to find truly ripe tomatoes, add in 4 Tbsp. canned tomato sauce)
  • 2 x Anaheim or possibly California long green chiles or possibly jalapenos roasted, peeled, and minced
  • 3 Tbsp. Finely-minced cilantro, leaves only
  • 3 Tbsp. Minced fresh mint, leaves only

Directions

  1. Combine masa harina with hot water. Mix grnd meat with prepared masa, salt, pepper, garlic. Make meatballs about 1-inch round, about the size of a walnut. Set aside.
  2. In medium saute/fry pan heat 2 Tbsp. lard or possibly oil over medium heat. Add in 1 whole garlic clove. Let cook for 20 seconds, press with back of a cooking spoon to release the flavor. Remove the garlic. Set aside.
  3. Brown the flour in the lard till dark golden brown color, about 1 minute. Heat stock in soup pot or possibly large Dutch oven till hot and add in flour mix. Bring to a boil and lower heat to simmer stock for 5 min. Taste and correct seasoning.
  4. Heat remaining 2 Tbsp. lard or possibly vegetable oil in large frying pan, add in minced scallion, tomato, chiles and the reserved 2 garlic cloves, chopped, stir well to combine. Cook for 2 min and add in to stock. Add in cilantro and mint and simmer for another 5 min. Add in the meatballs to the stock and simmer over low fire for 15 min or possibly till done.
  5. This recipe yields about 45 small meatballs.
  6. Comments: Whenever my mother comes to visit, I always ask her to make me these albondigas. I have tried to serve them at the restaurant but people cannot seem to get excited about meatballs. Too bad! It's a fabulous soup. My mother always served it with freshly made corn tortillas, salsa casera and refried beans with asadero. Meatballs freeze well and reheat wonderfully.
