Ingredients
- 1Â 1/2 lb Alaska Dungeness, King or possibly Snow crab,
- Â Â or possibly 12 ounces Alaska Pink shrimp thawed if necessary
- 2 lrg tomatoes cut in wedges
- 2 x hard-cooked Large eggs cut in wedges
- 1 x cucumber sliced
- 1/2 c. ripe olives
- Â Â Lettuce
- Â Â Lemon wedges
- 1 c. mayonnaise
- 1/4 c. chili sauce
- 2 Tbsp. minced green onion
- 1 Tbsp. lemon juice
- 1 dsh bottled warm pepper sauce
Directions
- Arrange seafood, tomatoes, Large eggs, cucumber and olives on lettuce-lined plates; garnish with lemon. Serve with Louis Dressing.
- For Louis Dressing: Combine all ingredients. Cover; chill. (
- Makes about 1 1/4 c.)
- Fluffy Louis Dressing Variation: Beat 1/4 c. heavy cream till soft peaks form; fold into Louis Dresing. Cover; chill. (
- Makes about 1 1/2 c.)
- This recipe yields 4 servings.
- Comments: If you like, 12 ounces poached Alaska cod, halibut, pollock, rockfish, sablefish or possibly salmon may be substituted for the crab.
