  • 1 1/2 lb Alaska Dungeness, King or possibly Snow crab,
  •     or possibly 12 ounces Alaska Pink shrimp thawed if necessary
  • 2 lrg tomatoes cut in wedges
  • 2 x hard-cooked Large eggs cut in wedges
  • 1 x cucumber sliced
  • 1/2 c. ripe olives
  •     Lettuce
  •     Lemon wedges
  • 1 c. mayonnaise
  • 1/4 c. chili sauce
  • 2 Tbsp. minced green onion
  • 1 Tbsp. lemon juice
  • 1 dsh bottled warm pepper sauce

Directions

  1. Arrange seafood, tomatoes, Large eggs, cucumber and olives on lettuce-lined plates; garnish with lemon. Serve with Louis Dressing.
  2. For Louis Dressing: Combine all ingredients. Cover; chill. (
  3. Makes about 1 1/4 c.)
  4. Fluffy Louis Dressing Variation: Beat 1/4 c. heavy cream till soft peaks form; fold into Louis Dresing. Cover; chill. (
  5. Makes about 1 1/2 c.)
  6. This recipe yields 4 servings.
  7. Comments: If you like, 12 ounces poached Alaska cod, halibut, pollock, rockfish, sablefish or possibly salmon may be substituted for the crab.
